Great Brunch Recipe

This is one of my favorite quick, easy and delicious main dishes for brunch.  Stuffing cubes work really well in this dish although you could make your own cubes out of Better Buns, Golden Sandwich Bread or Multi-Grain Bread.   I’ve included my Dad’s original and my favorite “Pizza” version.  Check back for more recipes including vegetarian and seafood variations 

Uncle Jack’s Denver Omelet Style Brunch Frittata

9 large eggs, slightly beaten20141206_234635

4 ½ cups milk or substitute*

¼ cup mayonnaise

½ tsp granulated garlic

4 cups better stuffing cubes

2 cups shredded cheddar cheese

½ cup chopped bell peppers (use combo of red, green, yellow)

½ – 1 teaspoon salt and pepper (to taste)

½ cup chopped onion

1 ½ cup chopped ham

Dash hot pepper sauce

Pre-heat oven to 325 ⁰.  Mix eggs, mayonnaise, milk (or sub) and garlic in a blog-size-fritata-slicelarge mixing bowl, blending until smooth.  Stir in stuffing cubes and set aside for 20 minutes.   Stir in ham cubes, peppers, onions and hot pepper sauce.  Spray a 13” x 9” baking dish with pan spray.  Pour the egg and milk mixture in the pan and sprinkle salt and pepper lightly over the surface.  Bake uncovered for 45 minutes.  Open oven and quickly sprinkle remaining cheese over the top.  Continue baking for another 15 minutes until middle is set.  Cut into squares and serve while hot. 

Debbie’s favorite “pizza” variation:  Substitute chopped turkey pepperoni for the ham.  Substitute ½ cup chopped sun dried tomatoes and ½ cup chopped mushrooms for the peppers and onions (or keep some in if you like) and substitute mozzarella cheese for ½ to all of the cheddar cheese.  Prepare as above.

* My favorite milk substitute for this recipe is a mixture of almond and soy milk.
